- 2 celery stalks, diced

- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 slices of bacon, cooked and crumbled (optional)
Instructions
- Dice the chicken into bite-sized pieces. Prepare the vegetables by chopping the onions, carrots, celery, and potatoes into uniform cubes.
- In a large pot over medium heat, cook the bacon until crispy (if using). Remove and drain on paper towels; leave some fat in the pot.
- Sauté onions in the pot until translucent (about 5 minutes). Add carrots and celery; cook for an additional 5 minutes.
- Stir in garlic and thyme; cook until fragrant (30 seconds). Add chicken and brown for about 5 minutes.
- Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat to simmer for 15-20 minutes or until potatoes are fork-tender.
- Gradually stir in heavy cream and season with salt and pepper. Simmer for another few minutes until heated through.
