  • 3 medium Yukon Gold potatoes (approximately 1 lb), diced
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 slices of bacon, cooked and crumbled (optional)

Instructions

  1. Dice the chicken into bite-sized pieces. Prepare the vegetables by chopping the onions, carrots, celery, and potatoes into uniform cubes.
  2. In a large pot over medium heat, cook the bacon until crispy (if using). Remove and drain on paper towels; leave some fat in the pot.
  3. Sauté onions in the pot until translucent (about 5 minutes). Add carrots and celery; cook for an additional 5 minutes.
  4. Stir in garlic and thyme; cook until fragrant (30 seconds). Add chicken and brown for about 5 minutes.
  5. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat to simmer for 15-20 minutes or until potatoes are fork-tender.
  6. Gradually stir in heavy cream and season with salt and pepper. Simmer for another few minutes until heated through.
