  • 1 cup pearl barley
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 1 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces. Chop the onions, carrots, celery, and mince the garlic.
  2. In a large skillet over medium heat, add olive oil and sauté the onions until translucent. Add carrots and celery; cook for about five minutes.
  3. Stir in the diced chicken and season with salt and pepper. Cook until no longer pink (6-8 minutes).
  4. Mix in the pearl barley and minced garlic. Pour in the chicken broth; bring to a simmer. Cook uncovered until barley is tender (about 30 minutes).
  5. Stir in heavy cream and frozen peas. Simmer for an additional 5 minutes.
  6. Garnish with fresh thyme or parsley before serving.
