- 1 bell pepper, chopped (any color)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 2 tsp chili powder
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Prep your ingredients by dicing the sweet potatoes, onion, and bell pepper.
- In a skillet over medium heat, sauté the onion and garlic until fragrant and translucent (optional).
- Add all ingredients to the crockpot: sweet potatoes, black beans, bell pepper, sautéed onion and garlic (if used), vegetable broth, cumin, chili powder, salt, and pepper. Stir well.
- Cover the crockpot; cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, stir in lime juice before serving. Garnish with cilantro or avocado if desired.
