  • 1 can (15 oz) black beans, rinsed and drained
  • 1 bell pepper, chopped (any color)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the sweet potatoes, onion, and bell pepper.
  2. In a skillet over medium heat, sauté the onion and garlic until fragrant and translucent (optional).
  3. Add all ingredients to the crockpot: sweet potatoes, black beans, bell pepper, sautéed onion and garlic (if used), vegetable broth, cumin, chili powder, salt, and pepper. Stir well.
  4. Cover the crockpot; cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, stir in lime juice before serving. Garnish with cilantro or avocado if desired.
