- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 can (13.5 oz) coconut milk
- 1/2 cup natural peanut butter
- 1 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 2 cups chopped bell peppers
- 1 cup chopped carrots
- 1/4 cup low-sodium soy sauce
- Juice of 1 lime
- Fresh cilantro (optional)
Instructions
- Prepare your ingredients by dicing bell peppers and slicing carrots.
- Sauté garlic and ginger in a skillet over medium heat for about one minute until fragrant.
- Transfer chicken, sautéed aromatics, coconut milk, peanut butter, vegetable broth, chopped veggies, soy sauce, and lime juice into the crockpot.
