  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup natural peanut butter
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 cups chopped bell peppers
  • 1 cup chopped carrots
  • 1/4 cup low-sodium soy sauce
  • Juice of 1 lime
  • Fresh cilantro (optional)

Instructions

  1. Prepare your ingredients by dicing bell peppers and slicing carrots.
  2. Sauté garlic and ginger in a skillet over medium heat for about one minute until fragrant.
  3. Transfer chicken, sautéed aromatics, coconut milk, peanut butter, vegetable broth, chopped veggies, soy sauce, and lime juice into the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken in the pot and stir to combine.
