  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tsp Italian seasoning

Instructions

  1. Heat a large pot over medium heat. Add ground Italian sausage and cook until browned, breaking it apart with a spatula.
  2. Stir in chopped onions and minced garlic. Sauté until onions are translucent (about 3-5 minutes).
  3. Pour in chicken broth and heavy cream; stir to combine.
  4. Add broken lasagna noodles to the pot and cook for about 10-12 minutes until softened.
  5. Fold in fresh spinach until wilted.
  6. Remove from heat and stir in mozzarella and Parmesan cheese until melted.
  7. Serve hot, garnished with additional Parmesan if desired.
