  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 3 green onions, chopped
  • 1 tsp garlic powder
  • 2 tbsp low-sodium soy sauce
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Cut the chicken thighs into bite-sized pieces. In a bowl, combine chicken with garlic powder, soy sauce, and green onions. Marinate for at least 15 minutes.
  2. Set up three bowls: one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Bread the marinated chicken by coating it in flour first, then dipping it in egg wash, and finally rolling it in breadcrumbs.
  4. Heat oil in a pot or deep frying pan to around 350°F (175°C). Test readiness with a breadcrumb; if it sizzles immediately, you're set.
  5. Fry the breaded chicken pieces in batches until golden brown and crispy, about 4-5 minutes per batch. Drain on paper towels.
  6. For the sweet and sour sauce, mix ketchup, rice vinegar, soy sauce, sugar, and cornstarch mixture in a saucepan over medium heat until thickened (about 5 minutes).
  7. Serve the crispy chicken balls drizzled generously with the sweet and sour sauce.
