  • 2 medium starchy potatoes (Russets)
  • 1 cup shredded Monterey Jack or Cheddar cheese
  • 1 medium onion, finely chopped
  • 4 flour tortillas (medium-sized)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil (for sautéing and cooking)

Instructions

  1. Peel and chop potatoes into cubes. Boil in salted water until fork-tender (about 15 minutes). Drain and let cool slightly.
  2. In a skillet, heat 1 tbsp olive oil over medium heat. Add onions and sauté until translucent (about 5 minutes).
  3. Mash the boiled potatoes in a bowl, then stir in sautéed onions, cheese, cumin, and chili powder until well combined.
  4. Heat a non-stick skillet over medium heat. Spread potato mixture onto one half of each tortilla, fold them over.
  5. Place folded quesadillas in the skillet for about 3-4 minutes per side, pressing gently with a spatula until golden brown.
  6. Let cool slightly before slicing into wedges. Enjoy with salsa or sour cream.
