- 8 oz (225g) rotini pasta
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 3 tbsp olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions
- Cook the rotini in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
- Steam broccoli florets for 3-4 minutes until bright green and tender-crisp. Plunge into ice water to stop cooking.
- In a large bowl, combine cooked pasta, cooled broccoli, cherry tomatoes, red onion, and feta cheese.
- Whisk together olive oil, lemon juice, oregano, salt, and pepper in a separate bowl until emulsified.
- Pour dressing over the pasta mixture and toss gently to coat evenly. Adjust seasoning as needed.
