  • 2 cups broccoli florets (about 150g)
  • 8 oz (225g) rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Cook the rotini in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. Steam broccoli florets for 3-4 minutes until bright green and tender-crisp. Plunge into ice water to stop cooking.
  3. In a large bowl, combine cooked pasta, cooled broccoli, cherry tomatoes, red onion, and feta cheese.
  4. Whisk together olive oil, lemon juice, oregano, salt, and pepper in a separate bowl until emulsified.
  5. Pour dressing over the pasta mixture and toss gently to coat evenly. Adjust seasoning as needed.
  6. Chill for at least 30 minutes before serving.
