  • 1 cup frozen corn
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 avocado, sliced
  • 1 cup salsa
  • Cilantro (optional)

Instructions

  1. Prepare your ingredients: Wash and chop bell peppers, rinse black beans, and cook brown rice according to package instructions (about 30 minutes).
  2. Season and cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with chili powder, cumin, salt, and pepper. Cook for 6-7 minutes per side until golden brown.
  3. Add the veggies: Remove cooked chicken from skillet. In the same skillet, sauté bell peppers and corn until tender (about 5 minutes).
  4. Shred or dice the chicken: After resting, shred or dice the chicken into bite-sized pieces. Return to skillet with veggies; stir in black beans and lime juice until warmed through.
  5. Assemble bowls: Layer rice at the bottom of meal prep containers, followed by the chicken mixture. Top with salsa and avocado slices; add cilantro if desired.
  6. Store & enjoy: Seal containers tightly and refrigerate for up to four days. Reheat in the microwave before serving.
