  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup fine cornmeal
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper; cook in a skillet over medium heat until browned (about 6 minutes per side). Remove and shred the chicken once cooled.
  3. In the same skillet, sauté chopped onion and bell pepper until soft (about 5 minutes). Add minced garlic, canned tomatoes, cornmeal, cumin, chili powder, and shredded chicken; mix well.
  4. Pour the mixture into the prepared baking dish and top with shredded cheddar cheese.
  5. Bake for about 30 minutes or until bubbly and golden brown. Allow to cool slightly before serving.
