  • 4 medium russet potatoes, peeled and diced

  • 2 bell peppers, diced (any color)
  • 2 cups sharp cheddar cheese, shredded
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup low-sodium beef broth
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes into bite-sized chunks. Chop the onion and bell peppers.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Add chopped onions and bell peppers to the skillet; cook until softened (about 5 minutes).
  4. In a crockpot, layer half of the diced potatoes, followed by half of the beef mixture and half of the cheese. Repeat layers with remaining ingredients.
  5. In a bowl, mix cream of mushroom soup, garlic powder, salt, pepper, and beef broth; pour over the layered casserole.
