- 4 cups vegetable broth
- 2 medium carrots, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced

- 1 tsp smoked paprika
- 2 cups fresh spinach or kale
- 1 can (14 oz) coconut milk
Instructions
- Rinse canned chickpeas under cold water. Chop the carrots and onion into uniform pieces.
- In a skillet, heat a splash of olive oil over medium heat. Sauté diced onion and minced garlic until fragrant and golden brown.
