  • 4 cups vegetable broth
  • 2 medium carrots, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 2 cups fresh spinach or kale
  • 1 can (14 oz) coconut milk

Instructions

  1. Rinse canned chickpeas under cold water. Chop the carrots and onion into uniform pieces.
  2. In a skillet, heat a splash of olive oil over medium heat. Sauté diced onion and minced garlic until fragrant and golden brown.
  3. Add chopped carrots, cumin, coriander, and paprika to the skillet; stir for a few minutes until veggies soften.
  4. Transfer the sautéed mixture to your crockpot. Stir in chickpeas, vegetable broth, and coconut milk until combined.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 15 minutes before serving, add spinach or kale to the pot and stir until wilted.
