  • 3 lb chuck roast
  • 3 large yellow onions, sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine (Merlot or Cabernet Sauvignon)
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season chuck roast with salt and pepper, then sear until browned on all sides (about 3-4 minutes each side). Remove from pot.
  2. In the same pot, add sliced onions and minced garlic. Cook until onions are soft and golden brown (about 10 minutes).
  3. Pour in red wine, scraping up browned bits from the bottom of the pot. Simmer for about 5 minutes.
  4. Return the roast to the pot with beef broth, thyme sprigs, and bay leaves. Bring to a gentle boil.
  5. Cover and reduce heat to low; simmer for about 3-4 hours until fork-tender.
  6. Remove bay leaves and thyme before serving with mashed potatoes or crusty bread.
