  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 fresh jalapeños, diced
  • 8 oz cream cheese
  • 4 cups chicken broth
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp chili powder
  • Fresh cilantro (for garnish)

Instructions

  1. Dice the onion and jalapeños finely and mince the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Stir in diced chicken breasts along with cumin and chili powder; cook until chicken is no longer pink (about 7 minutes).
  4. Pour in chicken broth and add chunks of cream cheese; stir until the cream cheese melts into the broth.
  5. Add chopped jalapeños and let simmer on low heat for about 20 minutes.
  6. Right before serving, mix in shredded cheddar until melted. Garnish with fresh cilantro.
