- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 fresh jalapeños, diced
- 8 oz cream cheese
- 4 cups chicken broth
- 2 cups sharp cheddar cheese, shredded
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tsp cumin
- 1 tsp chili powder
- Fresh cilantro (for garnish)
Instructions
- Dice the onion and jalapeños finely and mince the garlic.
- In a large pot over medium heat, add olive oil and sauté the onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
- Stir in diced chicken breasts along with cumin and chili powder; cook until chicken is no longer pink (about 7 minutes).
- Pour in chicken broth and add chunks of cream cheese; stir until the cream cheese melts into the broth.
- Add chopped jalapeños and let simmer on low heat for about 20 minutes.
- Right before serving, mix in shredded cheddar until melted. Garnish with fresh cilantro.
