  • 4 cups fresh corn kernels (about 6 ears of corn)
  • 1/2 cup mayonnaise
  • 1 cup crumbled Cotija cheese (or feta)
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 1/4 cup chopped fresh cilantro
  • 1 tsp chili powder
  • 1/2 cup finely chopped red onion
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Grill the corn until charred on all sides, about 10 minutes.
  2. In a large bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
  3. Once cooled slightly, cut the kernels from the grilled corn and add them to the bowl along with red onion and cilantro. Mix gently.
