Ingredients

  • 4 cups mixed greens (arugula and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed
  • 2 large hard-boiled eggs
  • 1 can (5 oz) high-quality tuna in olive oil, drained
  • 1/2 cup black olives, pitted
  • 2 tbsp capers, rinsed
  • Juice of 1 lemon (about 2 tbsp)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash all vegetables under cold water and pat dry.
  2. Boil salted water and cook green beans for about 3 minutes until bright green but crisp. Drain and plunge into an ice bath.
  3. For the eggs, place them in cold water, bring to a gentle boil, cover and let sit for 10-12 minutes before transferring to cold water.
  4. In a large bowl, combine mixed greens, halved cherry tomatoes, blanched green beans, drained tuna, olives, capers, and sliced hard-boiled eggs.
  5. Drizzle with olive oil and lemon juice; season with salt and pepper. Toss gently to coat.
  6. Serve immediately for maximum freshness.
