- 4 cups mixed greens (arugula and spinach)
- 1 cup cherry tomatoes, halved
- 1 cup green beans, trimmed
- 2 large hard-boiled eggs
- 1 can (5 oz) high-quality tuna in olive oil, drained
- 1/2 cup black olives, pitted
- 2 tbsp capers, rinsed
- Juice of 1 lemon (about 2 tbsp)
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash all vegetables under cold water and pat dry.
- Boil salted water and cook green beans for about 3 minutes until bright green but crisp. Drain and plunge into an ice bath.
- For the eggs, place them in cold water, bring to a gentle boil, cover and let sit for 10-12 minutes before transferring to cold water.
- In a large bowl, combine mixed greens, halved cherry tomatoes, blanched green beans, drained tuna, olives, capers, and sliced hard-boiled eggs.
- Drizzle with olive oil and lemon juice; season with salt and pepper. Toss gently to coat.
- Serve immediately for maximum freshness.
