Ingredients

  • 2 medium zucchinis, chopped
  • 1 cup sweet corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil (extra virgin)
  • 1 tbsp honey or agave syrup
  • Salt & pepper to taste

Instructions

  1. Wash and chop all vegetables: zucchini, bell pepper, and red onion.
  2. In a large skillet over medium heat, warm olive oil until shimmering. Add zucchini and corn, sautéing for about 5-7 minutes until tender yet crisp.
  3. Stir in red onion during the last couple of minutes until fragrant. Season with salt and pepper.
  4. In a small bowl, whisk together lime juice, honey (or agave), and additional olive oil. Taste and adjust sweetness if needed.
  5. In a large bowl, combine sautéed veggies with cilantro. Drizzle dressing over top and toss gently to coat.
  6. Serve immediately or let marinate in the fridge for enhanced flavors.
