  • 1 cup heavy whipping cream (cold)
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • ¾ cup powdered sugar (sifted)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat softened butter until creamy; gradually add sugar until light and fluffy.
  4. Add eggs one at a time, followed by vanilla extract; mix until combined.
  5. Gradually combine dry ingredients with wet mixture alternating with milk until smooth.
  6. Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  8. Whip heavy cream until soft peaks form; gradually add powdered sugar until stiff peaks form.
  9. Assemble by layering chantilly cream and fresh berries between the cooled cake layers and on top.
