  3. Activate Yeast: In a small bowl, combine warm water and sugar, then sprinkle yeast on top. Let sit for 5-10 minutes until frothy.
  4. Mix Dough: In a large bowl, combine mashed sweet potatoes, melted butter, salt, and the activated yeast mixture.
  5. Incorporate Flour: Gradually add flour until a soft dough forms; you may not need all the flour.
  6. Knead Dough: Transfer dough to a floured surface and knead for 5-8 minutes until smooth and elastic.
  7. First Rise: Place dough in an oiled bowl, cover it, and let rise in a warm place for about an hour or until doubled in size.
  8. Shape Rolls: Punch down the dough gently and divide into equal portions. Shape each portion into a ball and place on greased baking sheets.
