  • 2 medium onions, diced
  • 4 cloves garlic, minced
  • 3 tbsp Hungarian sweet paprika
  • 2 cups canned diced tomatoes
  • 4 cups low-sodium beef broth
  • 2 medium carrots, sliced
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pot over medium-high heat. Sear the beef in batches until browned on all sides.
  2. In the same pot, sauté the onions until translucent, then add garlic and cook until fragrant.
  3. Stir in paprika, salt, and pepper; then add canned tomatoes and mix well.
  4. Pour in beef broth, carrots, and bay leaves. Bring to a boil, then reduce heat to low.
  5. Cover partially and simmer for at least 1.5 hours until the beef is fork-tender. Stir occasionally.
  6. Remove bay leaves, adjust seasoning if needed, and serve hot garnished with fresh parsley.
