  • 1 can (14.5 oz) diced tomatoes with juices
  • 6 cups vegetable broth
  • 1 cup ditalini pasta (or any small pasta)
  • 1/2 cup pesto sauce (homemade or store-bought)
  • 2 cups fresh spinach or kale
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot over medium heat, warm the olive oil. Add the onion, carrots, and celery; sauté until soft (about 5 minutes).
  2. Crumble in the Italian sausage and cook until browned.
  3. Stir in the minced garlic and cook for an additional minute before adding the diced tomatoes with their juices.
  4. Pour in the vegetable broth and bring to a gentle boil.
  5. Add the pasta and cook according to package directions until al dente. In the last few minutes of cooking, stir in the spinach or kale until wilted.
  6. Just before serving, mix in the pesto and season with salt and pepper to taste. Serve hot with grated Parmesan on top.
