  • 4 cups fresh spinach
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Chop the onion and mince the garlic.

  3. Brown the sliced sausage in the same skillet until cooked through.
  4. Transfer the sausage mixture to the slow cooker; add spinach, beans, broth, thyme, oregano, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
