- 1 tsp fresh rosemary, chopped (or 1/3 tsp dried)
- 1 tsp fresh thyme, chopped (or 1/3 tsp dried)
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
- Add diced carrots and celery; cook until softened.
- Stir in minced garlic, rosemary, and thyme; cook for an additional 1-2 minutes.
- Add cannellini beans and vegetable broth; bring to a gentle simmer while stirring occasionally.
- Just before serving, stir in fresh spinach until wilted (about 2 minutes).
- Squeeze lemon juice over the soup, season with salt and pepper, then serve.
