  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh rosemary, chopped (or 1/3 tsp dried)
  • 1 tsp fresh thyme, chopped (or 1/3 tsp dried)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add diced carrots and celery; cook until softened.
  3. Stir in minced garlic, rosemary, and thyme; cook for an additional 1-2 minutes.
  4. Add cannellini beans and vegetable broth; bring to a gentle simmer while stirring occasionally.
  5. Just before serving, stir in fresh spinach until wilted (about 2 minutes).
  6. Squeeze lemon juice over the soup, season with salt and pepper, then serve.
