  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Peel and chop sweet potatoes into chunks; boil until tender (about 15 minutes). Mash until smooth.
  3. In a mixing bowl, beat together the softened butter and sugar until fluffy (3-5 minutes).
  4. Add in mashed sweet potatoes, eggs, vanilla, cinnamon, and nutmeg; mix until combined.
  5. Gradually fold in sifted flour mixed with baking powder until no dry flour remains.
  6. Pour batter into the loaf pan and smooth the top. Bake for 55-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
