  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 2 large carrots, thinly sliced
  • 4 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 3 garlic cloves, minced
  • 1 inch fresh ginger, grated
  • 3 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) or preheat the grill.
  2. Wash and chop all vegetables: slice bell peppers, cut broccoli into florets, and thinly slice carrots.
  3. Cut four large squares of aluminum foil.
  4. Distribute chicken breasts evenly among the foil squares. Top with veggies.
  5. Drizzle each packet with soy sauce and sesame oil; add minced garlic and grated ginger.
  6. Season with salt and pepper.
  7. Fold foil over to seal tightly.
  8. Cook on the grill or in the oven for 25-30 minutes until chicken is cooked through (internal temperature reaches 165°F) and veggies are tender.
