  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust to taste)
  • Juice of 1 lime
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • 1/4 cup cooking oil (canola or vegetable)

Instructions

  1. Season salmon cubes with salt and pepper.
  2. In one bowl, place panko breadcrumbs. In another bowl, combine mayonnaise and Sriracha.
  3. Dip each salmon cube in the mayo mixture, then coat with panko breadcrumbs.
  4. Heat oil in a skillet over medium-high heat until shimmering.
  5. Fry salmon bites for 3-4 minutes on each side until golden brown.
  6. Drain on paper towels and drizzle with lime juice and green onions before serving.
