  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup full-fat sour cream
  • 1 tsp pure vanilla extract
  • 2 cups fresh blueberries
  • 1 tbsp cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of a springform pan.
  3. Beat cream cheese until smooth, then add sugar and mix until fluffy.
  4. Gently fold in sour cream and vanilla extract.
  5. Cook blueberries with a bit of sugar in a saucepan until they burst, then mash slightly to create sauce.
  6. Pour half the cheesecake filling over the crust, drizzle blueberry sauce on top, and add remaining filling. Swirl with a knife.
  7. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Cool in the oven with door ajar for an hour.
  8. Refrigerate for at least 4 hours before serving.
