- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cups fresh broccoli florets
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups shredded cheddar cheese (divided)
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- In a skillet over medium heat, add olive oil and cook the chicken breasts for approximately 6-7 minutes on each side until golden brown and cooked through. Remove from heat and let cool before cutting into bite-sized pieces.
- In a large mixing bowl, combine the cooked chicken, broccoli florets, cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
- Fold in half of the shredded cheddar cheese into the mixture. Transfer everything into the prepared baking dish and top with remaining cheese and panko breadcrumbs.
- Bake in the preheated oven for 30-35 minutes until bubbly and golden brown. Allow to cool slightly before serving.
