  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 8 oz rotini or penne pasta
  • 1 cup buffalo sauce
  • 8 oz cream cheese (softened)
  • 2 cups shredded sharp cheddar cheese (divided)
  • 2 green onions (chopped for garnish)
  • 1 tsp garlic powder
  • 1 packet ranch dressing mix

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish with nonstick spray.
  2. Cook pasta in boiling water until al dente; drain and set aside.
  3. In a skillet over medium heat, cook diced chicken until golden brown and cooked through, seasoning with salt and pepper.
  4. In a large bowl, mix softened cream cheese, buffalo sauce, ranch dressing mix, garlic powder, and half of the cheddar cheese until smooth.
  5. Stir in cooked pasta and chicken into the sauce mixture until well-coated. Transfer to greased baking dish.
  6. Top with remaining cheddar cheese and bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving.
