  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, chopped
  • 3 garlic cloves, minced
  • 1 tbsp sesame oil
  • Pork rinds (optional)

Instructions

  1. Marinate beef with soy sauce, sesame oil, garlic, and green onions for at least 30 minutes.
  2. In a skillet over medium-high heat, cook the marinated beef until browned (5-7 minutes).
  3. Gradually cook Arborio rice in warm broth while stirring until creamy (18-20 minutes).
  4. Fold shredded cheese into the risotto until melted.
  5. Shape cooled risotto around a spoonful of bulgogi filling into balls.
  6. Roll each ball in flour, dip in beaten eggs, and coat with breadcrumbs or crushed pork rinds.
  7. Fry in hot oil until golden brown (3-4 minutes per side).
