- 2 tablespoons Cajun seasoning
- 8 ounces fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup bell peppers (red, yellow, green), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with Cajun seasoning on both sides and let marinate.
- Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
- Push vegetables aside, add chicken breasts to the skillet, and cook until golden brown (6-7 minutes per side). Remove and let rest.
- In the same skillet, add minced garlic and sauté until fragrant (30 seconds). Pour in heavy cream while scraping the bottom of the pan.
- Stir in cooked pasta and grated Parmesan cheese until combined and creamy.
- Slice rested chicken into strips and mix back into the pasta mixture. Adjust seasoning with salt or extra Cajun spice.
