  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 ounces fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup bell peppers (red, yellow, green), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with Cajun seasoning on both sides and let marinate.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
  3. Push vegetables aside, add chicken breasts to the skillet, and cook until golden brown (6-7 minutes per side). Remove and let rest.
  4. In the same skillet, add minced garlic and sauté until fragrant (30 seconds). Pour in heavy cream while scraping the bottom of the pan.
  5. Stir in cooked pasta and grated Parmesan cheese until combined and creamy.
  6. Slice rested chicken into strips and mix back into the pasta mixture. Adjust seasoning with salt or extra Cajun spice.
  7. Serve hot, garnished with additional Parmesan and fresh parsley.
