  • 3 tbsp extra virgin olive oil (divided)

  • 1/4 tsp black pepper (to taste)
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash into bite-sized pieces.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and sliced onions. Cook until translucent, about 10 minutes.
