  • 1 cup unsalted raw cashews
  • 2 tbsp fresh ginger, minced
  • 2 bell peppers, sliced (any color)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 4 garlic cloves, minced
  • 2 tbsp cornstarch
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. In a bowl, whisk together soy sauce, honey, cornstarch, chicken broth, ginger, garlic, and lemon juice.
  3. Heat oil in a skillet over medium-high heat; sauté garlic and ginger until fragrant.
  4. Add chicken and cook until browned (5-7 minutes). Incorporate bell peppers for the last few minutes of cooking.
  5. Pour sauce over chicken mixture; stir until coated and bubbly (3-5 minutes). Add cashews and mix well.
