- 2 tbsp fresh ginger, minced
- 2 bell peppers, sliced (any color)
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 4 garlic cloves, minced
- 2 tbsp cornstarch
- 1/2 cup low-sodium chicken broth
- 2 tbsp fresh lemon juice
Instructions
- Cut chicken into bite-sized pieces and season with salt and pepper.
- In a bowl, whisk together soy sauce, honey, cornstarch, chicken broth, ginger, garlic, and lemon juice.
- Heat oil in a skillet over medium-high heat; sauté garlic and ginger until fragrant.
- Add chicken and cook until browned (5-7 minutes). Incorporate bell peppers for the last few minutes of cooking.
- Pour sauce over chicken mixture; stir until coated and bubbly (3-5 minutes). Add cashews and mix well.
