- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 6 cups fresh romaine lettuce, chopped
- 8 oz fusilli or penne pasta
- 1 cup creamy Caesar dressing
- ½ cup grated Parmesan cheese
- 1 cup croutons
- Freshly cracked black pepper to taste
- Juice of 1 lemon
Instructions
- Preheat grill or skillet over medium-high heat. Season chicken with salt and pepper; grill for 6-7 minutes on each side until cooked through. Let cool, then slice.
- Cook pasta in salted boiling water according to package instructions until al dente. Drain and do not rinse.
- In a large bowl, combine warm pasta with Caesar dressing. Gently fold in chopped romaine and sliced chicken.
- Add grated Parmesan and toss lightly. Just before serving, sprinkle croutons and drizzle with lemon juice.
