  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 6 cups fresh romaine lettuce, chopped
  • 8 oz fusilli or penne pasta
  • 1 cup creamy Caesar dressing
  • ½ cup grated Parmesan cheese
  • 1 cup croutons
  • Freshly cracked black pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken with salt and pepper; grill for 6-7 minutes on each side until cooked through. Let cool, then slice.
  2. Cook pasta in salted boiling water according to package instructions until al dente. Drain and do not rinse.
  3. In a large bowl, combine warm pasta with Caesar dressing. Gently fold in chopped romaine and sliced chicken.
  4. Add grated Parmesan and toss lightly. Just before serving, sprinkle croutons and drizzle with lemon juice.
