  • ¾ cup granulated sugar, divided

  • 1 cup sour cream
  • 2 large fresh lemons (juice and zest)

  • 3 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press mixture into the bottom of a 9-inch springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Let cool.

  4. Mix in sour cream, lemon juice, lemon zest, and vanilla extract until combined.

  7. Turn off the oven and leave the cheesecake inside with the door ajar for an hour to prevent cracks.
  8. Chill in the refrigerator for at least four hours before serving.
