- 2 cups carrots, chopped
- 2 cups bell peppers, diced (mixed colors)
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups diced tomatoes (canned or fresh)
- 4 cups low-sodium vegetable broth
- 1 tsp ground cumin
- 1 tsp paprika (or smoked paprika)
- 2 cups kale or spinach, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Prepare the crockpot by plugging it in and setting it on low heat.
- In a skillet over medium heat, sauté onions in olive oil until translucent (about 5 minutes).
- Add carrots, bell peppers, and garlic to the skillet; cook until softened (3 minutes).
- Transfer sautéed veggies to the crockpot. Mix in chickpeas, tomatoes, broth, cumin, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in greens about 15 minutes before serving until wilted.
