- 8 oz rotini pasta
- 1 lb lean ground beef
- 1 packet taco seasoning (1 oz)
- 14.5 oz canned diced tomatoes (with juice)
- 1 cup bell peppers (diced)
- 8 oz cream cheese (cubed)
- 1 cup shredded cheddar cheese
- 15 oz black beans (drained and rinsed) – optional
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 cups low-sodium chicken broth
Instructions
- Brown the ground beef in a skillet over medium heat; drain excess fat.
- Sauté chopped onions and minced garlic until golden, about 3-5 minutes.
- In the crockpot, combine browned beef, sautéed onions and garlic, canned tomatoes, bell peppers, taco seasoning, chicken broth, black beans (if using), and cream cheese. Stir well.
- Cook on low for 4 hours or high for 2 hours.
- About 30 minutes before serving, stir in uncooked pasta and shredded cheddar cheese; cover to cook until pasta is tender.
- Serve hot and garnish with fresh cilantro or jalapeños if desired.
