  • 1 inch fresh ginger, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp vegetable oil
  • 3 green onions, chopped
  • 1 cup bell peppers (any color), sliced
  • 1 tsp sesame oil

Instructions

  1. Prepare your ingredients: chop vegetables and mince garlic and ginger.
  2. Cook the noodles: Boil water in a pot, cook egg noodles until al dente, drain, and reserve some pasta water.
  3. Sauté aromatics: Heat vegetable oil in a skillet, then add garlic and ginger; sauté until fragrant (about 30 seconds).
  4. Cook the lamb: Add diced lamb to the skillet; brown for 5-7 minutes.
  5. Add veggies & spices: Stir in bell peppers and cumin seeds; cook until veggies soften (about 3-4 minutes).
  6. Combine everything: Fold in cooked noodles, soy sauce, and reserved pasta water as needed; mix until heated through.
  7. Serve hot, drizzled with sesame oil and topped with green onions.
