- 2 tbsp fresh basil, finely chopped
- 2 tbsp fresh parsley, finely chopped

- 2 tbsp olive oil (plus extra for greasing)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Place each chicken breast between plastic wrap and pound to about 1/2 inch thick.
- In a bowl, mix ricotta, basil, parsley, garlic powder, and parmesan until well combined; season with salt and pepper.
- Spoon filling onto one end of each chicken breast and roll tightly; secure with toothpicks if needed.
- Place rolls seam-side down in a greased baking dish. Drizzle with olive oil and sprinkle with salt and pepper.
