  • 4 boneless, skinless chicken breasts
  • 1 cup fresh ricotta cheese
  • 2 tbsp fresh basil, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp garlic powder
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil (plus extra for greasing)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between plastic wrap and pound to about 1/2 inch thick.
  3. In a bowl, mix ricotta, basil, parsley, garlic powder, and parmesan until well combined; season with salt and pepper.
  4. Spoon filling onto one end of each chicken breast and roll tightly; secure with toothpicks if needed.
  5. Place rolls seam-side down in a greased baking dish. Drizzle with olive oil and sprinkle with salt and pepper.
  6. Bake for 25-30 minutes or until golden brown and cooked through.
  7. Let rest for 5 minutes before slicing.
