- 2 cups short-grain sushi rice
- 4 nori sheets
- 8 tempura shrimp (pre-made or homemade)
- 1 ripe avocado
- 1 cucumber (julienned)
- 2 tbsp sriracha sauce
- 3 tbsp eel sauce
- 1 tbsp toasted sesame seeds
Instructions
- Rinse sushi rice under cold water until clear. Cook according to package instructions (approximately 20 minutes) until fluffy.
- While the rice cooks, slice the avocado and julienne the cucumber.
- Place a nori sheet shiny side down on a bamboo mat. Wet your hands and spread about 1 cup of sushi rice over the nori, leaving an inch at the top.
- Layer tempura shrimp, avocado, and cucumber in the center of the rice. Roll tightly using the bamboo mat.
- With a wet sharp knife, slice each roll into six pieces, wiping the knife between cuts for clean edges.
- Drizzle eel sauce over rolls and sprinkle with sesame seeds before serving.
