  • 1 ripe mango, diced
  • 1 cup fresh pineapple chunks
  • ¼ cup low-sodium soy sauce
  • 2 tbsp pure honey
  • 3 garlic cloves, minced
  • 2 tbsp freshly squeezed lime juice
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a bowl, whisk together soy sauce, honey, minced garlic, and lime juice. Add the chicken breasts and marinate for at least 30 minutes.
  2. While the chicken marinates, chop the mango and pineapple into bite-sized pieces.
  3. Preheat your grill to medium-high heat (about 400°F/200°C).
  4. Grill the marinated chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F.
  5. In the last few minutes of grilling, add mango and pineapple chunks on the grill until caramelized.
  6. Remove from heat and let rest for a few minutes before garnishing with fresh cilantro.
