Ingredients

  • 1 yellow bell pepper, cut into large chunks
  • 1 red onion, sliced into thick rings
  • 1 cup cherry tomatoes
  • 8 oz portobello mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  2. Slice zucchini and bell peppers into uniform sizes.
