- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1/4 cup pure honey
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cinnamon
- 2 tbsp fresh parsley, chopped (for garnish)
- 1 cup grated cheese (optional)
Instructions
- Preheat oven to 400°F (200°C). Cut butternut squashes in half lengthwise and scoop out seeds.
- Drizzle olive oil over cut sides, then sprinkle with salt, pepper, and cinnamon. Place cut-side down on a baking sheet lined with parchment paper.
- Roast the squash for about 30 minutes until fork-tender.
- While the squash roasts, season chicken breasts with salt and pepper. Cook in a skillet over medium heat for about 5-7 minutes per side until golden brown.
- Shred or chop cooked chicken into bite-sized pieces and mix with honey and remaining spices.
- Carefully turn the roasted squash cut-side up and fill each half with the chicken mixture. Optionally sprinkle cheese on top and return to oven for an additional 10 minutes until golden.
