  • 1/2 cup balsamic vinegar
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh basil or rosemary for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper.
  3. Place chicken breasts in a zip-lock bag or bowl and pour the marinade over them. Let sit for at least 30 minutes.
  4. While marinating, slice zucchini and halve cherry tomatoes.
  5. Heat a large oven-safe skillet over medium-high heat and sear chicken for 4-5 minutes per side until golden brown.
  6. Add zucchini and cherry tomatoes around the chicken in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes until chicken is cooked through.
  8. Let rest for a few minutes before slicing. Serve warm with fresh herbs on top.
