  • 1 cup orzo pasta
  • 3 cloves fresh garlic, minced
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, grated
  • Juice of 1 lemon
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh mint, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  3. Add uncooked orzo and chicken broth (4 cups) to the skillet. Bring to a gentle boil, then reduce heat to low; simmer until orzo is tender, about 10 minutes.
  4. Meanwhile, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper in a bowl to make tzatziki sauce.
