- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 cup pineapple chunks (fresh or drained canned)
- 1 small red onion, diced
- ¼ cup fresh cilantro, chopped (optional)
- 8 tortillas (flour or corn)
- Juice of 1 lime
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Cut chicken into bite-sized pieces. In a bowl, mix olive oil, garlic powder, salt, and pepper; add chicken and coat evenly. Let marinate for at least 15 minutes.
- Place marinated chicken in the baking dish and bake for about 20 minutes or until cooked through (internal temperature should reach 165°F).
- Meanwhile, prepare the pineapple salsa by mixing pineapple chunks, diced red onion, chopped cilantro (if using), lime juice, salt, and pepper in a bowl.
