  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 cup pineapple chunks (fresh or drained canned)
  • 1 small red onion, diced
  • ¼ cup fresh cilantro, chopped (optional)
  • 8 tortillas (flour or corn)
  • Juice of 1 lime
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Cut chicken into bite-sized pieces. In a bowl, mix olive oil, garlic powder, salt, and pepper; add chicken and coat evenly. Let marinate for at least 15 minutes.
  3. Place marinated chicken in the baking dish and bake for about 20 minutes or until cooked through (internal temperature should reach 165°F).
  4. Meanwhile, prepare the pineapple salsa by mixing pineapple chunks, diced red onion, chopped cilantro (if using), lime juice, salt, and pepper in a bowl.
  5. Warm tortillas in a skillet or foil in the oven for about 5 minutes. Fill each tortilla with baked chicken and top with pineapple salsa.
