  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh strawberries, chopped
  • 3/4 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gently fold in the strawberries. Add heavy cream and vanilla extract; mix until just combined.
  5. Turn the dough onto a floured surface and knead gently until smooth. Shape into a circle about 1-inch thick and refrigerate for 10 minutes.
  6. Cut into wedges or rounds and place on the prepared baking sheet. Bake for 15-20 minutes or until golden brown.
