  • 1 medium yellow onion, thinly sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup low-sodium beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning

Instructions

  1. In a large pot of boiling salted water, cook the penne according to package instructions until al dente. Drain and set aside.
