  • 2 tbsp curry powder (preferably Madras)
  • 1 cup red bell pepper, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tbsp vegetable oil
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Peel and chop the pineapple; dice the onion; mince garlic and ginger; slice bell peppers.
  2. In a large pan over medium heat, add vegetable oil and sauté onions until translucent. Add garlic and ginger.
