  • 1 cup mini marshmallows
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in pumpkin puree and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually add to wet ingredients until just combined.
  5. Fold in chocolate chips and mini marshmallows gently.
